The project “Uva Pretiosa” has received funding from the European Union’s through the Region Tuscany Rural Development Plan (activated measures (16.2, 1.1, 1.2, 1.3). It aims to find new reuses technics of by-products of grape-wine production chain.
The project will last 32 months from February 2019 to October 2021. The funding given by FEASR is 315.255,57 €.
Winemaking is well-known for its generation of large amounts of organic wastes and by-products, such as marcs, pomace, lees and seeds.
In general, pomace represents 20-30 % of the original grape weight for the vinification process. It is estimated that about 5% of the total volume of wine produced is lees, which translates into more than 100,000 hL per year in Tuscany alone.
The industrial wine sector is exploring solutions to develop marketable products resulting from the exploitation of the industry’s wastes.
