Winemaking is well-known for its generation of large amounts of organic wastes and by-products, such as marcs, pomace, lees and seeds.
In general, pomace represents 20-30 % of the original grape weight. It is estimated that about 5% of the total volume of wine produced is lees, which translates into more than 100,000 hL per year in Tuscany alone.
The industrial wine sector is exploring solutions to develop marketable products resulting from the exploitation of the industry’s wastes.
